This pumpkin bread recipe is great for entertaining or enjoying with a morning cup of coffee.
Ingredients:
- 2 cups all purpose flour
- 1 15 oz can pumpkin pie mix
- 1 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 cup finely chopped walnuts or pecans
- 1 stick butter, softened
- 1 egg
- 2-3 tablespoons cinnamon
- 1/2 teaspoon baking powder
- Preheat oven to 350.
- Mix the flour, baking powder, and 1 tablespoon of cinnamon in a medium bowl. Set aside.
- Mix the egg, pumpkin pie mix, 1 cup brown sugar, 2 tablespoons white sugar, and 1/2 stick butter in a large mixer on medium low speed for 1 minute (until everything is well blended).
- Add the dry ingredients one cup at a time into the mixer. Mix on medium or medium low until everything is well blended. Fold in 1/2 cup walnuts.
- Use 1/4 cup butter to grease a bread pan (preferrably glass). Pour the bread mix into the pan and cook for 30 minutes.
- Meanwhile, mix the remaining walnuts, brown and white sugar, and cinnamon in a small bowl. Sprinkle on top of the bread and cook another 30 to 45 minutes (until toothpick comes out clean from center).
- Melt the remaining butter in the microwave for 15-20 seconds in a microwavable safe bowl.
- Let the bread cool in the pan for about 5 minutes, then carefully take it out of the pan and place on a cooling rack. Pour the melted butter on top. Wait 10-15 minutes to cut and serve.
