Pumpkin Apple Soup
 
 
Fall is here, so it is officially time to start eating fall fare. So prepare for apple, pumpkin, squash, turkey, and lots of yummy spices like cinnamon and nutmeg, but most of all get ready to feast on fall favorites beginning with some delicious creamy and sweet pumpkin apple soup.
 
 
Ingredients:
 
  • 1 1/2 cups Pumpkin Pie Purée
  • 3 cups chicken stock
  • 3/4-1 cup heavy cream
  • 4 Tablespoons butter
  • 2-3 large apples such as Gala, chopped
  • 1/2 a large red onion, finely chopped
  • 1 Tablespoon Cinnamon
  • 1 Teaspoon Poultry Seasoning
  • 1/2 Teaspoon Nutmeg
Directions:
 
  1. Melt butter in a large sauce pan over medium heat. Once melted, toss in the apple and red onion and let cook for about 5 minutes till softened. Add the poultry seasoning and stir.
  2. Pour in the pumpkin pie purée and stir, add the chicken stock and bring to a rolling boil over medium high heat.
  3. Lower the temperature to medium and stir in the heavy cream, cinnamon, and nutmeg. Cover and heat for 3-5 minutes, then turn heat to low and simmer about 5 minutes or prepare to serve.


This goes great with a salad or some cheesy ciabatta sandwiches with corned beef and muenster cheese. Happy Eats!!!
