Apple Cider Beets

Beets are so good in a salad or paired with a good seasoned chicken and pork dinner. This recipe goes wonderful with the Autumn Waldorf Salad, on the side or mixed in.

Ingredients:

  • 2 10.5 oz. cans sliced beets
  • 1 can Beet Juice
  • 1 can Apple Cider
  • 1/4 to 1/3 cup sugar
  • 2 Tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon salt
Directions:

  1. Drain one can of beets.
  2. Pour the drained and non-drained can of beets into a pot.
  3. Fill one beet can with apple cider and pour into pot.
  4. Bring to a boil over medium high heat. Turn the heat to low.
  5. Add the sugar, orange juice, and salt. Stir and let heat on low for 5 minutes.
  6. Use a pasta scoop or a spoon with holes and place beets in a serving dish.
  7. Spoon 1/4 cup of the liquid on top of them and top off with orange zest and Serve.
Perfect for a quick fall side dish. Enjoy and Happy Fall!!
