Mama's Sweet Comforting Meatloaf
Meatloaf is one of the ultimate comfort foods of autumn and winter. Meatloaf is also the go to dinner for many families. Unlike the old recipe with finely chopped celery, onions, and carrots topped with ketchup, this Mama's meatloaf is sweetened with the help of Grape Jelly and veggies are optional.
- 1 1/2 lb. Ground Beef
- 3/4-1 cup Panko Bread Crumbs
- 1 cup Ketchup
- 3/4 cup Grape Jelly
- 3 Tablespoons Mustard
- 1 Tablespoon Seasoning Salt
- 1 Tablespoon Garlic Salt or Powder
- 1 Teaspoon Brown Sugar
- 1/2 Teaspoon Nutmeg
- 1/4 Teaspoon Salt and Pepper
Directions
- Preheat oven to 375.
- Mix the Panko bread crumbs, seasoning salt, garlic salt, brown sugar, nutmeg, salt, and pepper together in a small bowl. Set aside.
- Mix the ketchup and grape jelly in a small pot on the stove over medium high heat, stir and bring to a rolling boil, stirring often. Turn heat to low.
- Mix the ground beef, seasonings, mustard, and 1/3 cup of the jelly/ketchup mix together. Place in a loaf pan sprayed lightly with baking spray.
- Pour the rest of the ketchup/jelly mix over the meat, spread to even out over the meat.
- Cook 1 hours or until the temperature of the meat is 160-165. Let set for 10 minutes before lifting out using two forks or a spatula, cut and serve.
This recipe would be good for a casual family gathering or a potluck. It is different and kids really love it. The kids can also help in preparing the seasoning and, with parental supervision, stirring the sauce. Enjoy!!!
