Autumn Waldorf Salad
This recipe was inspired by the "Harvest Waldorf Salad" from the 2014 Sept./Oct. issue of Cooking with Paula Deena. This recipe differs in several ways, but still packs a taste of fall in each bite.
Dressing:
- 1 cup sour cream
- 2-3 tablespoons Red Wine Vinegar
- 1-2 tablespoons molasses
- 1 teaspoon salt and pepper
Salad:
- 3-4 Golden Delicious Apples, chopped
- 8 cups Torn Kale, washed and dried
- 8 oz. of walnuts
- 1 log of goat cheese (cranberry pecan goat cheese is awesome in this and can be found in the special cheese area of the store)
- Apple Cider Pork (optional, click to get recipe)
Directions:
Mix the dressing ingredients using a whisk or fork until creamy and smooth. Set aside. Mix the salad ingredients in a large bowl, toss to mix. Pour the dressing over the salad mix and toss using two forks until the dressing is mixed in well with the other ingredients.
This is perfect for harvest parties, Halloween gatherings, Thanksgiving, and even, perhaps, Christmas Dinner. It also goes well with beets cooked in apple cider. Enjoy and Happy Fall!!!
